Liam and a No Bake Treat

So much has happened since my last post, ya know almost a year ago! So much that I don't even know where to begin...
We had a baby boy!!!
Less than 1 hour old
He came into the world 4.5 weeks early after a complicated pregnancy. Honestly we are lucky he and I both are here and healthy now. I had a great doctor who watched him and me like a hawk through the entire pregnancy and then we had amazing nurses and doctors in the hospital.

Things are still nuts in our house. Now that we are getting on a loose schedule I'm starting to cook and bake more. I was on bed rest right in the middle of the nesting stage. To keep from losing my mind I journaled  food and craft ideas and spent my days on Pinterest for a month. Now I have an arsenal of new recipes, party ideas and DIY home decor to try; I should start those projects soon!

Right now I'm working out the kinks for Caleb's birthday party. We decided with all the craziness surrounding us waiting a couple of week after his birthday would be a good idea. This will be his last solo birthday party. Since the boys' birthdays are less than a month and half apart we will be combining them for as long as we can. With the date creeping up I should have a fun Super Hero Party post coming soonish.

One thing I did make recently  were these Cookies and Cream Treats.








Ugly but so very tasty!
They were inspired by these cookies and cream bars  I found them on Pinterest.  These have been on my "to make" list for a while now. The hubs LOVES LOVES LOVES cookies and cream ice cream and these are easy and quick so I've been meaning to make them for months! I'll tell you they are addictive and have almost a fudgy texture if you process them into crumbs in a food processor. I took them and lemon bars to a family get together where my sister and Nana both brought desserts, it's normal for the three of us to over do it a bit on the sweets, we brought a few home and they were promptly go the next day. I can't blame my son either, I don't know if he had a single one, it was all Lee and me.

Crockpot BBQ Chicken

I'm back, finally! Sort of... This is just a short post for now and crossing my fingers to be back soon. I made so amazing BBQ chicken in my slow cooker a couple of weeks ago. So easy and gooooooood.





You'll need: 
6 boneless skinless Chicken Breasts
2 18oz bottles of BBQ sauce (I used Sweet Baby Ray's)
1 bottle of beer (we used Samuel Adams Boston Lager)
garlic powder
onion powder




Place the thawed chicken in the crock pot. Pour 1 1/2 bottles of BBQ sauce over the chicken, along with the beer. Sprinkle on just enough of the powder to lightly cover. Cook on low for 6 hours. Shred chicken with two forks toss back into slow cooker. Use the remainder of the sauce for extra for the sandwich.

for the slaw
You'll need:
1 head of cabbage
salt
honey
juice of 1 lime

Shred or chop your cabbage to the texture you like. Mix in the ingredients to taste.

I started making this slaw for fish tacos but it is the only slaw that I can get my husband to eat so it is the only slaw allowed in our house now. But it is so good I will eat a bowl of just slaw for lunch some days. Does that make we strange? If you think that makes me strange you must not know me then... Just sayin...
